These pumpkin peanut butter cookies are made with almond flour, which makes them an ultimate low carb dessert that you’ll want to have in your pantry at all times.

The cookie obsession is real - especially if we’re talking about keto cookies! Add some pumpkin puree, pumpkin spice, and creamy PB to the picture and the temptation to bake them (and, of course, eat them) becomes irresistible.
Step by step directions
You know the drill! First, we need to combine all the dry ingredients in a mixing bowl until no clumps remain. Add the peanut butter, egg, pumpkin puree, and lemon juice to the bowl and mix well with the dry ingredients until reaching an even consistency.
Now, I just want to explain why we need the lemon juice over here! You see, to activate the baking soda we need some kind of acid. To make sure that we create all those carbon dioxide bubbles (which will help our cookies rise and give them an amazing, chewy texture) we add the lemon juice! Also, lemon juice will remove the metallic aftertaste of baking soda, which we definitely don’t need in our low carb cookies.
Finally, we are ready to shape our cookies. Roll the dough into 9 balls (40g each) and place them on a baking tray lined with parchment paper, leaving around one centimeter (half an inch) between each of them. Flatten slightly with the palm of your hand, then use a fork to press down the cookies into a crisscross, classic pattern.
Pop into the oven and bake for 10 minutes or until the cookies turn into a beautiful golden color.
Take the baking tray out from the oven. The cookies will be very soft; that’s how they should be. Just trust the process! They will harden while cooling down.
Using a plastic spatula, transfer the cookies onto a cooling rack. Let them cool completely before serving.
Is pumpkin keto
Although pumpkin and butternut squash are part of the starch family and contain a fair amount of carbs, they can definitely fit into your low carb diet! Well, unless you decide to eat a whole pumpkin in one sitting.
One cup of 100% pumpkin purée has 7g of carbs which, in my opinion, can be included in a well-balanced low carb diet. However, my pumpkin cookies call for only 30g, which is even better. Enjoy your pumpkin, guys!
What type of sweetener to choose
Sure you can, but you'll end up with a very grainy texture since artificial sugars don’t melt like regular white sugar. If that’s okay with you, go ahead and use granulated sugar - or you can make powdered sugar from it. Simply place your granulated sugar into a blender and blend it on the highest setting for several minutes.
