One-pan cheesy brussels sprouts with bacon is a side dish that’s very easy-to-make yet incredibly flavorful, filled with creamy cheese and crispy bacon bits that will make you fall in love with brussels sprouts.

Ingredients

  • 19 oz (500g) brussels sprouts, fresh or frozen, cut in half if needed
  • 7 oz (200g) unsliced slab bacon,  diced
  • 1 ¼ cup (100g) shredded cheese of your choice,  I use cheddar cheese
  • Freshly ground pepper

Instructions

  • Preheat the oven to 170C (340F).
  • Cook the bacon in the cast-iron skillet over a medium-high heat for 5 minutes or until the bacon starts to take on a golden color. If you don’t have a cast-iron pan, you can use a non-stick skillet for this and the next step of the recipe.
  • Add the brussels sprouts, season everything with freshly ground pepper and cook for another 5 minutes or until the brussels sprouts are slightly browned.
  • Top the sprouts with the shredded cheese of your choice. If you used the non-stick skillet, you need to transfer the brussels sprouts with bacon to a casserole dish first and then top everything with the shredded cheese.
  • Pop the cast iron skillet or the casserole dish into the oven and bake for 10 minutes or until the cheese is fully melted and bubbly.
  • Serve warm!
