Equipment

  • Stand mixer or hand mixer

Ingredients

  • 3 large eggs, whites and yolks separated, at room temperature
  • ¼ cup (50g) cream cheese, at room temperature
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 160C (325F) and line the baking sheet with parchment paper.
  • In a clean and dry mixing bowl (even one drop of water will ruin the recipe), add the egg whites and salt; beat to firm peaks.
  • In another mixing bowl, add the egg yolks and cream cheese and beat until a pale yellow color.
  • In batches, gently fold the egg whites into the egg yolk mixture using a spatula until just combined. Don’t overmix, as this will deflate the batter.
  • Scoop 6 portions of the batter onto the parchment paper, leaving some space between them.
  • Bake for 20-25 minutes or until golden. Leave to cool on the baking tray for 5-10 minutes and serve!
