- 1 cup 100g almond flour
- 1 packed cup 90g shredded coconut + some for coating unsweetened
- 4 tbsp 60g granulated sweetener such as Sukrin or Swerve
- ¼ teaspoon salt
- 5 oz 150g cream cheese
- 1 teaspoon vanilla extract
In a large bowl, combine the first 4 ingredients.
Add the cream cheese and vanilla and mix well until reaching a homogenous consistency.
Roll 8 even bolls. If the mixture is too sticky, wet your hands with a little bit of water and roll.
Coat each ball in shredded coconut and place on a large clean plate.
Refrigerate for 1 hour, then serve.
