Creamy Udon Noodles are what you make when you want something comforting, rich, and impressive, but still quick enough for a weeknight. Think carbonara vibes, but with chewy udon noodles, savory pancetta, earthy mushrooms, and a silky Parmesan sauce. It’s simple, bold, and incredibly satisfying.

Equipment

  • Stockpot (2-3qt or 2-3litters)

Ingredients

  • 7 oz (200g) fresh udon noodles
  • 3.5 oz (100g) pancetta cut into cubes
  • 5 oz (150g) cremini mushrooms sliced
  • 2 large eggs
  • ½ cup (50g) Parmesan cheese finely grated, plus more for serving
  • 2 tablespoon soy sauce
  • ½ cup (100g) pasta water plus more if needed
  • Nori and green onions thinly sliced, for topping

Instructions

  • Crack the eggs into a bowl and whisk well. Add the Parmesan and soy sauce, then mix to combine. Set aside.
  • Cook the noodles according to the package instructions. Time it so the noodles are ready 30-60 seconds after the pancetta and mushrooms are done.
  • Meanwhile, heat a skillet over medium-high heat and add the pancetta cubes. Cook until golden brown, about 3-4 minutes.
  • Add the mushrooms and cook for 5-6 minutes, stirring occasionally, until golden.
  • Remove the skillet from the heat about 30 seconds before adding the noodles.
  • Drain the noodles, reserving ⅓ cup of the cooking water. Pour it into the egg mixture and whisk vigorously.
  • Add the noodles to the skillet and toss well.
  • Pour in the egg and cheese mixture and stir vigorously until a creamy sauce forms and coats the noodles.
  • Serve immediately, topped with thinly sliced nori and green onions.

Notes

This dish is best enjoyed fresh, as the sauce thickens as it cools. If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat gently over low heat with a splash of water to loosen the sauce.
