Equipment

Ingredients

  • 2.2 lb (1 kg) chicken wings flats and drums separated
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

Hot Honey Sauce

  • 4 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon red chili flakes
  • 1 clove garlic finely grated
  • 2 tablespoon sriracha sauce
  • 2 tablespoon unsalted butter

Instructions

  • In a large mixing bowl, combine the wings, baking powder, salt, black pepper, and garlic powder. Let them sit for 20 minutes.
  • Meanwhile, preheat the oven to 415F (215C) with the fan on.
  • Add the olive oil to the chicken and toss to coat.
  • Arrange the chicken on a wire rack set over a baking sheet. Bake for about 30 minutes, or until fully cooked and crispy. The internal temperature of the wings when done should be 175F-195F (79C-91C).
  • In a saucepan, combine all the hot honey sauce ingredients except the butter. Heat over medium heat until the mixture just starts to bubble. Remove from the heat and add the butter. Whisk well until melted and smooth.
  • Once the wings are done baking, place them in a large clean mixing bowl. Pour the sauce over and toss well to coat.
  • Serve right away with a dipping sauce of your choice.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.
To reheat, place the wings in a hot oven or air fryer until heated through and crispy again, or reheat them in the microwave.
