Equipment

Ingredients

  • 1 lb (450g) carrors
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 2 teaspoon sumac or lemon pepper seasoning
  • 1 teaspoon salt

Instructions

  • Preheat the oven to 200C (400F).
  • Peel the carrots and cut them into sticks of roughly equal size so they cook evenly.
  • In a large bowl, toss the carrots with the honey, olive oil, sumac (or lemon pepper), and salt until evenly coated.
  • Spread them out in a single layer on a baking sheet lined with parchment paper. Make sure they are not overlapping. Overcrowding the pan will steam the carrots rather than roast them.
  • Roast for 25–30 minutes, flipping halfway through, or until the carrots are tender and caramelized at the edges.
  • Serve immediately.

Notes

 Store the leftovers in an airtight container in the fridge for up to 3 days. Reheat in a hot oven or air fryer to bring back some of the caramelization, or warm them in a pan or in the microwave.
