Ingredients

  • 1 lb 500g fresh broccoli florets washed and cut into bite-sized pieces
  • 1 small 50g red onion finely chopped
  • 8 strips bacon
  • cup 35g walnuts roughly chopped
  • cup 140g Instant keto mayonnaise or any keto mayo of your choice
  • ¼ cup 60g sour cream
  • 2 tablespoon white wine vinegar
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  • Heat a non-stick skillet over a medium heat. When hot, add the bacon and fry until golden brown and crisp. Remove from the skillet onto a paper towel. When the bacon has completely cooled, chop it into small cubes.
  • Place the broccoli, onions, nuts, and bacon in a large mixing bowl.
  • In a small mixing bowl, whisk together the mayonnaise and white wine vinegar, then pour into the salad bowl. Season with salt and pepper, toss well, and taste. Add more salt if needed.
  • Refrigerate for at least 30 minutes before serving.
