    Made with almond flour, shredded coconut, and cream cheese, these easy and delicious keto fat bombs are healthy, gluten-free, and low carb snacks or desserts that can be made in no time.

    Ingredients and substitutes

    Flour – I use almond flour, but hazelnut flour or sunflower seed flour will work just as well in this keto fat bomb recipe.

    Shredded coconut – Make sure that you use unsweetened shredded coconut.

    Sweetener – I always use a sweetener from Sukrin (erythritol and stevia blend) because it has almost no cooling aftertaste. However, you can use Swerve, allulose, or any other keto-friendly sweetener of your choice. 

    Salt – A pinch of salt for flavor balance.

    Vanilla extract – Vanilla flavor goes well with coconut.

    Step by step directions

    In a large bowl, combine all dry ingredients.

    Add the cream cheese and vanilla and mix well until a homogenous consistency is reached.

    Roll 8 even bolls. If the mixture is too sticky, wet your hands with a little bit of water and roll.

    Coat each ball in shredded coconut and place on a large clean plate, so they don’t touch each other. 

    Refrigerate for 1 hour, then serve.

    Flavor variations

    Lemon zest – You don’t have to add vanilla into your fat bombs. If you like a citrusy flavor more, add the zest of one lemon instead of vanilla extract.

    Nuts – You can’t skip adding shredded coconut into the fat bomb mixture, but you can coat your low carb fat bombs in something other than coconut. For one alternative, you can use finely crushed nuts. Pecans, walnuts, and/or pistachios will add some extra flavor, nutrition value, and a little bit of crunch.

    Chocolate – Melt some sugar-free chocolate or chocolate chips using a double-boiler method, or in the microwave using short intervals (5-10 sec.). When done, drizzle over already chilled low-carb keto fat bombs. The chocolate will set immediately. You can enjoy your keto snack right away, or return the plate into the fridge until you’re ready to serve.

    Nut butter - If you're a big fan of nut butter, you can replace 1-2 tablespoons of cream cheese with creamy peanut butter, almond butter, or any other nut butter of your choice.

    Carbs in keto fat bombs

    Hands down, fat bombs are the ultimate sweet treat for those who follow a keto diet. Each ball will have around 3g net carbs, which means that this dessert – or snack, if you will – won't throw you out of ketosis.

    Can I freeze keto fat bombs?

    Yes, you can! Place all fat bombs on a large cutting board or a baking sheet and freeze until solid. Then, place everything in a zip-lock bag or an air-tight container and store in the freezer for up to 2 months. Before serving, thaw in the fridge overnight.

    How long will keto fat bombs last in the fridge?

    Place your fat bombs on a large plate so they don’t touch each other. Cover with plastic wrap and refrigerate them for up to 3 days.

    • 1 packed cup 90g shredded coconut + some for coating unsweetened
    • 4 tbsp 60g granulated sweetener such as Sukrin or Swerve
    • ¼ teaspoon salt
    • 5 oz 150g cream cheese
    • 1 teaspoon vanilla extract

    Instructions

    • In a large bowl, combine the first 4 ingredients.
    • Add the cream cheese and vanilla and mix well until reaching a homogenous consistency.
    • Roll 8 even bolls. If the mixture is too sticky, wet your hands with a little bit of water and roll.
    • Coat each ball in shredded coconut and place on a large clean plate.
    • Refrigerate for 1 hour, then serve.

    Notes
