Ingredients and substitutions
I prefer to use very small baby Bella mushrooms (the smaller the better) for this recipe because I don't want to cut them. Plus, I think sautéed whole mushrooms look better. However, the size doesn't affect the taste, only the look, so you can buy bigger mushrooms and cut them in half. Also, you can use white bottom mushrooms if you like them more!
Unsalted butter - Choose grass-fed unsalted butter for a better flavor. However, if you want to make this dish paleo and vegan, go ahead and use olive oil instead! I assure you, it will be very delicious.
Dried or fresh thyme - When it comes to herbs, I prefer dried ones; they’re cheaper and don't need too much attention. The key to using dried herbs, however, is to add them closer to the end of cooking to avoid burning. But, if you prefer fresh herbs, you do you.
Fresh garlic and garlic powder - There's no such thing as too much garlic.
Fresh chives for garnishing - I think chives and butter mushrooms with garlic belong to each other. Also, I love to add some fresh greens to my cooked food for more flavors and some crunch.
Step by step directions
First, we need to heat our large skillet over a medium heat. The heat in this recipe is very important, especially if you use butter! As you might know, butter has a very low smoking point. So, since we want our mushrooms to be tasty and buttery, we're going to cook them slowly to avoid our butter burning and oxidizing.
Then, when the skillet is hot, melt the butter and add the garlic cloves. Cook them for a minute to bring some flavors into the butter and then add the mushrooms. Season them with salt and ground black pepper to taste and cook for 5 minutes or until they reduce in size and start browning. At last, we're going to add the garlic powder and dried thyme (or fresh, if you like) and cook for around 7 minutes or until the mushrooms are golden-brown. Sprinkle in some chives and serve warm.

Instructions
