I prefer to use very small baby Bella mushrooms (the smaller the better) for this recipe because I don't want to cut them. Plus, I think sautéed whole mushrooms look better. First, we need to heat our large skillet over a medium heat. The heat in this recipe is very important, especially if you use butter! As you might know, butter has a very low smoking point.
