A year ago, if someone had told me that I would enjoy eating brussels sprouts, I definitely wouldn’t have believed them. I’m not a big fan of brussels sprouts, as you can probably tell by now! I don’t enjoy roasted brussels sprouts with balsamic glaze or honey, so you’ll never see these kinds of recipes on my site. However, there are so many benefits to eating these baby cabbages that I had to figure out how to implement them into my keto meal plan without torturing my taste buds - and I think that I’ve nailed it.
Step by step directions
Let me tell you one thing about bacon: you want to use an unsliced piece in this recipe! Why? Because thin strips of bacon are boring and we want our bacon bits to shine through the low carb brussels sprouts in this dish. Just trust me on this!
Cook the bacon in the cast-iron skillet over a medium-high heat for 5 minutes or until the bacon starts to take on a golden color. If you don’t have a cast-iron pan, you can use a non-stick skillet for this and the next step of the recipe.
Cut the brussels sprouts in halves, if needed, and add to your bacon. Season everything with freshly ground pepper and cook for another 5 minutes or until the brussels sprouts are slightly browned.
Top our bacon brussels sprouts with the shredded cheese of your choice. I highly recommend using cheeses with a sharp flavor, like cheddar, parmesan cheese, or provolone!
If you used the non-stick skillet, you need to transfer the brussels sprouts with bacon to a casserole dish first and then top everything with the shredded cheese.
Pop the cast iron skillet or the casserole dish into the oven and bake for 10 minutes or until the cheese is fully melted and bubbly.

- 19 oz (500g) brussels sprouts, fresh or frozen, cut in half if needed
- 7 oz (200g) unsliced slab bacon, diced
- 1 ¼ cup (100g) shredded cheese of your choice, I use cheddar cheese
- Freshly ground pepper
