This easy keto chicken salad recipe, with a creamy dressing and crunch from the walnuts and onions, is a very satisfying salad that is gluten-free and can be enjoyed on a low carb diet.

Ingredients and substitutes
Chicken - You can, of course, make your own shredded chicken with chicken breasts and thighs in a pressure cooker, Dutch oven, or just boil and shred it. However, I like to cut corners when I can without hurting the quality, so I use rotisserie chicken in this EASY chicken salad! If you take my advice, don't forget to remove the skin and bones.
Onions - I decided to use two different types of onion - red and green. Red onions can add too many carbs, so I decided to replace some with green onions that are delicious and more keto-friendly.
Celery - If you don’t like celery, you can add diced cucumber instead.
Nuts - Walnuts are my favorites, but pecans or crushed almonds will work as well.
INSTANT KETO MAYONNAISE - I make my own mayo using olive oil, but you can use any mayonnaise you like.
Dijon mustard – You can add any type of mustard you like, but I prefer Dijon mustard because it has no sugar in it.
Lemon juice - This low carb chicken salad is very delicious but can be heavy. That's why adding some acidity brings a fresh touch to it. You can also use white wine or apple cider vinegar if you like.
Cilantro – Alternately, you can add freshly chopped parsley.
Step by step instructions
In a small mixing bowl, combine the mayonnaise, mustard, lemon juice, and salt with black pepper to taste.
In a salad bowl, add the chicken, onions, walnuts, celery, and cilantro. Pour the prepared dressing on top and toss everything to combine. Taste and adjust salt if needed.
Let the salad chill in the fridge for at least 30 minutes to combine the flavors. Serve!

While you can freeze shredded chicken with onions to thaw them overnight in the fridge and make the salad later, don't freeze it with the dressing. The dressing will become watery once thawed, which won't make for a good tasting salad.
